Pan fried Salmon with a rocket & avocado salad

This is one of my favourite go-to dinners when I don’t have much time for preparation. It has a great balance of protein and healthy fats for a really satisfying meal, while being extremely waistline friendly.

What’s not to like??


Ingredients:

  • 1 tsp Coconut oil

     

     

  • 150g salmon fillet, skin on, thickly sliced

     

     

  • ½ lemon, juice only, plus lemon wedges to garnish

     

     

  • Rocket or Salad leaves

     

     

  • ½ a large, ripe avocado

     

     

  • ½ clove garlic

     

     

  • Olive oil

     

     

  • salt and freshly ground black pepper

How to:

1. Melt the Coconut Oil in a frying pan. Add the salmon skin-side down, season with salt and freshly ground black pepper and squeeze a little lemon juice on top. Fry for 2-3 minutes, then turn the salmon over and fry for a further 1-2 minutes, or until cooked through. Squeeze a little more lemon juice on the salmon and taste to check the seasoning. Remove from the pan and set aside.

2. Place salad leaves in a bowl and drizzle with olive oil, salt, pepper and a squeeze of lemon juice. I would personally add half a clove of crushed garlic, but that is because I’m obsessed with the stuff! Mix until the leaves are covered with the dressing.

3. At this point, you can either chop the avocado and add to the salad, or leave on the side.

To Serve:

Pile the salad up onto a serving plate and either place the salmon fillet on top, or next to the salad. Squeeze some more lemon juice over the top and enjoy.
