Raw Chocolate Truffles

Chocolate… I don’t know that many people who don’t like chocolate… In a way I kind of wish I was one of them but, then again, maybe not.

These truffles are delicious, they have a real chocolate kick from the raw cacao and you can still feel saintly eating them - which is always a bonus.

These quantities make approx 24 depending on size:

500g Medjool Dates

Half a cup of flax seed or almond meal if you are ok with nuts

4 Tablespoons Raw Cacao

1/2 Cup Raw Cacao Nibs

1/2 – 1 Cup boiling water

Shredded coconut, Raw Cacao, Crushed nuts are all options to coat the balls in after preparing… You can get as creative with this as you like!

Pop all the ingredients in a blender or Nutri Bullet… you will have to gradually add the water or it will all get a bit sticky and stuck! When it’s a fairly thick consistency take a spoon and roll into individual balls.

I keep my toppings in bowls and then just roll the balls in whichever ones you fancy - shredded coconut, raw cacao or chopped nuts.

Pop them in the fridge if you want a slightly more truffle-like consistency and that’s it, all done….. So easy and so delicious.
