I love this for a warm, filling and nutritious start to the day. It has a perfect balance of slow release carbs, protein and healthy fats to keep you full up until lunch time. As with all my recipes, it’s also a great healthy option and waistline friendly!
If you don’t eat bacon, you could substitute with eggs which I sometimes do also and it works great. For a vegan option, you can add extra nut butter and bulk out the wrap with extra salad and veggies.
Ingredients:
- 1 Gluten free tortilla wrap (or regular if you are OK with gluten)
- 2 rashers of lean smoked back bacon
- ½ a large ripe avocado
- 1 tbsp Tahini or nut butter
- 1 large handful rocket
- Large drizzle olive, chilli or garlic oil
Method:
- Place the bacon in either a frying pan or a tray under the grill. I grill mine as I like it crispy, however if I do fry it I dry fry since no additional
oil will be needed.
- While the bacon is cooking, lay out the wrap on a plate and spread the tahini or nut butter evenly over it.
- Add the rocket and then drizzle over with olive oil, or a flavoured version such as chilli.
- Take the avocado and chop into thin strips which you then lay down the centre of the wrap.
- Once the bacon is ready, take out of the pan and place down the centre of the wrap. (The more ingredients in the centre, the easier it is to then roll
up)
- So, finally roll all over as tight as you can and bingo, all done!
