After a few attempts this recipe has hit the spot! It's moist, has the ideal amount of sweetness and it's super satisfying. I replaced butter with coconut oil and sugar with some honey, although not a huge amount is needed as the banana provides it's own natural sweetness.
It's a really simple recipe made up of store cupboard basics... In this recipe I have included dates as a topping, however you can also include walnuts, chocolate chips, raisins or other chopped nuts. I always have a few bananas on the side that we leave long enough to go black too!
Ingredients:
2 eggs
1/2 cup melted coconut oil
1/3 cup honey
1/4 cup milk or goats milk
1 teaspoon vanilla extract
2-3 medium bananas mashed
1 3/4 cups gluten free flour
1 teaspoon baking soda
1/2 cup chopped dried dates
How to:
Pre-heat oven to 180 degrees and grease a 9x5 inch loaf tin
In a medium bowl, whisk the flour, cinnamon and baking soda
In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in the bananas and flour mixture
Pour mixture into greased pan, top with dates, chocolate chips or banana. Bake for 45 - 50 minutes or until a sharp knife inserted comes out clean
Leave to cool on a wire rack for 10 minutes
