These breakfast ‘quiches’ are a great twist on the classic quiche lorraine. Ham makes the perfect replacement for a pasty crust, it’s low carb and even adds additional protein to your meal. Not only that, but they’re great to make in advance and grab as an ‘on the go’ breaky!
The combo of bacon, gooey cheese, eggs and ham is an absolute winner and works every time. It’s super easy to prep with ingredients that we will most likely have in the fridge anyway.
This recipe makes 2 servings, therefore adjust accordingly for more or less.
Ingredients:
- 3 Eggs
- 2-3 Slices Deli Ham
- 20g Mature Cheddar Cheese
- 2 Slices Bacon (I use smoked)
- 50mls Almond Milk
- Salt & Pepper
How to:
Pre Heat the oven to 180 degrees so it warms whilst you are putting together the ingredients
Start off by frying 2 slices of bacon in a hot pan, once browned take out, place on a piece of kitchen roll and leave to cool slightly
Take 2 ramekins, grease with coconut oil or butter and line with Deli ham. 1 slice per ramekin, maybe slightly more depending on the size of the slice!
Cut up the cooled bacon and add a slice into the bottom of each ramekin
Next cut up 20g of Mature cheddar into cubes, place half into each on top of the bacon bits
Whisk 3 eggs, adding in the almond milk and pepper (salt if desired)
Once the eggs are whisked, pour half the mixture into each ramekin, covering the bacon and cheese in the bottom
Place the ramekins in the oven and bake for 15 minutes. The edges of the ham will most likely go crispy before the eggs are cooked and that’s ok.
Serve either on their own or with a salad…. DELICIOUS!!
