This is a great winter warmer for those cold evenings. Although winter is technically over, the evenings are still chilly and call for some comfort food. High in protein, low in saturated fat and really satisfying and healthy at the same time.
Ingredients:
Chicken Meatballs
- 450g Lean Chicken Mince
- 1 Garlic clove chopped
- 2 Tbsp fresh Parsley chopped
- 1 tsp Chilli Flakes
- 2 Tbsp Olive Oil
Method:
- To make the meatballs, place the chicken, chilli, parsley and garlic into a mixing bowl. Mix thoroughly so all ingredients are combined evenly
- Roll equal portions of the mince mixture into golf ball-size meatballs.
- Heat the oil in a medium frying pan. Add the meatballs and fry for two minutes to brown all over.
- Transfer the meatballs to a baking sheet and place in the oven to bake for five minutes.
Spicy tomato sauce
- 1 can tinned tomatoes or 5 large fresh tomatoes
- 6 Large mushrooms chopped
- 1 Red onion chopped
- 1 tsp Chill flakes
- 1 or 2 Garlic cloves chopped
- 1 Tbsp olive oil
Method:
- In a pan place the olive oil, chopped garlic, chilli and onion and cook until soft but not browned.
- Add in the mushrooms and tomatoes and pop the lid on with the pan on a low heat.
- Cook through for 5 β 10 minutes until the mushrooms are soft.
Now both the meatballs and sauce are ready, add the two together in a pan and cover in the sauce.
Sometimes I will just have these with a salad, however, sweet potato tastes amazing with these meatballs. So I would make some sweet potato spaghetti in my spiralizer and itβs the perfect combo.
