I love this breakfast! It’s so easy with oodles of health & nutritional benefits…..need I say more??
Chia seeds pack a nutritional punch. They are high in fibre, protein, and antioxidants to name a few. All these things mean they will keep us fuller for longer whilst giving our bodies all the good stuff it needs. They are little powerhouses and are really versatile, I will post plenty of recipes using these little beauties on here
Making these is so easy with many different combos you can use:
- 2 Cup Coconut Milk
- 1/2 Cup Chia Seeds
- 1/2 Teaspoon Vanilla Extract
- Honey, Maple Syrup, Coconut Syrup to taste depending on sweetness
- Pinch of cinnamon, optional but I love it and helps balance blood sugar
Mix altogether without the chia, to begin with, to ensure all ingredients are blended together well. Then add the chia and stir in until evenly spread throughout the mixture.
Place in the fridge overnight and in the morning top with the fruit of your choice.
Not only is this great for breakfast, but can be used as a dessert also if you feel like something sweet after dinner.
